Homemade Potato Chip Dip Recipe

I am not a huge fan of potlucks. I get stressed out trying to figure out what dish to bring. I’m always just a little embarassed when I bring home a full dish. Am I right? Don’t you want to be the person leaving with an empty dish or is that just me? I figure an empty dish means people liked what I made so I did a good job. But a full dish? Not so much. From now on, I’m bringing this homemade chip dip with a bag of Cape Cod® Potato Chips because I know I’ll have an empty dish.

 

This homemade potato chip dip recipe is easy but it does take time.  I have a friend who makes a homemade onion dip that I love but I wanted to add my own little twist so I decided to add bacon.  Bacon makes everything better! But first, start with the onions.

 

I sliced my onions on a mandoline to make sure they were nice and thin. I should have diced them after slicing them. They ended up being pretty stringy, which is just not a good texture in a potato chip dip. So slice, and then finely dice.

Cook the onions low and slow until they reach a nice dark brown color. Yours will look much smaller as they will diced and ready to go in the dip.

The hard part is done. Mix all the ingredients together and it’s ready. I like potato chip dip recipes with sour cream so I used more sour cream than mayo, but adjust to your own tastes. The dip can be eaten right away, but it’s so much better the longer it sits. So try and make it a day ahead.

Now, don’t go to all the trouble of making a homemade potato chip dip and then serve the dip with just any old potato chip. Homemade Potato Chip Dip Recipe

1½ cups thinly sliced and then diced yellow onions 6 strips of thick bacon 1 cup sour cream ¼ cup mayo 1 teaspoon Italian Seasonings Mix
Ingredients
  • Cook bacon in a large skillet until nice and crispy. Remove bacon from the pan leaving the drippings. Finely dice bacon and set aside.
  • Saute the onions in the same frying pan over a low heat until they are a deep golden brown. This will take at least an hour. I covered the onions to start and stirred occasionally to coat in the bacon grease. I left the cover off for most of the cooking.
  • Let the onions cool to room temperature.
  • Mix the sour cream, mayo and Italian seasonings together in a bowl. If you don't want to make the seasoning mix, just add in the spices to taste. Stir in the onions and bacon.
  • Cover and refrigerate for 24 hours before serving for best flavor.
  • Serve with Cape Cod® Potato Chips.
